
Lemon Poppy Pudding
With Go Raw Sprouted Super Simple Granola
Vegan, Gluten Free
Ingredients:
- 2 Tbsp. Fresh Lemon Juice (about 1 lemon)
- Zest of 1 Lemon
- 1 Tbsp. Maple Syrup
- 2-3 tsp. Poppy Seeds
- 6 Tbs. Chia Seeds
- 1 cup Non-Diary Milk (ie: raw vanilla almond milk)
- Pinch of Himalayan Pink Salt (optional)
- Go Raw Sprouted Super Simple Granola
- Serves 2
Directions:
- Zest lemon into a small bowl and set aside
- Slice the lemon in half and squeeze the juice into a larger bowl, add non-dairy milk, a pinch of lemon zest, maple syrup, pink salt and whisk together
- Stir in poppy seeds and chia seeds until thoroughly incorporated
- Refrigerate for 15 minutes or until a gelatinous pudding-like consistency has formed
- Top with lemon zest, Go Raw Granola and extra poppy seeds. Coconut whip and slivered almonds would be great additions too
